Our Lady Gray is reminicent of an early morning stroll through the moors: cool mist rising off the heather, damp earth underfoot, and early morning light breaking over the next hill… but you don’t have to take our word for it.
The flavor profile is bright bergamot as the first impression, followed by a hint of lavender and finally the bright umami freshness of the tea leaves themselves. This is our whisper-soft take on the traditional Earl Grey, using white tea leaves as the canvas for citrus and floural.
Intrigued? This brew is for you!
STEEPING:
Lady Gray makes for a graceful and aromatic hot or cold-brewed tea (will even hold up to a splash of milk):
3-5 grams (1 -2 Tablespoon)s of tea leaves
14-16 fl oz water ~175F
Steep 1: 3 min
Steep 2: water 180F for 5 min
Steep 3: water 185F for 7 min
Each sip unfolds in layers. Sparkling bergamot opens bright and zesty, then gives way to a gentle lavender bloom that rounds the edges without ever turning perfumey. Beneath it all runs a fresh, savory umami note, with a silky body and a clean, lingering finish.
